Choco Moose

“Chickpea juice? Are you joking?”

I quote myself above.

The fact this worked baffled me beyond compare, but the results were incredible.

prep time 20 mins     total time 1 hour 20 minutes

Ingredients  

  • 120 ml Aquafaba (or Chickpea juice)

  • 100g Coconut Sugar

  • 200g Dark Chocolate 

Method:

  1. Break the chocolate up and begin to melt slowly over a slow heat then leave to cool.  

  2. Add the sugar and chickpea juice to a separate mixing bowl and whisk for 10 minutes (10 minutes is crucial to the outcome/texture of the moose) 

  3. After 10 minutes (no sooner) add the melted chocolate and continue to mix. 

  4. Spoon the mousse into serving glasses and chill for at least 1 hour.
