5 Bean Chilli

Cheap, cheerful & colourful.

Ingredients

  • Ingredients (serve 4 - average cost around 89p per person/per plate)

  • 2 diced garlic cloves

  • 1 stalk of celery diced

  • 1 small white onion 

  • 2 tbs olive oil

  • 1 tin aldis mixed beans

  • 3 tbs tomato pure

  • 1 tin plumbed tomatoes

  • 200ml water

  • Spices: thyme, rosemary, salt, pepper + paprika. 

  • To serve: rice + fresh basil/chilli. .
    .

Method

  1. Dice the onion and celery and add into a medium sized pan on medium heat for 5 minutes with chopped garlic and olive oil.

  2. Add the tomato pure, thyme and rosemary and stir for 3 more minutes . Meanwhile drain the beans.

  3. Add the beans to the pan along with the plumbed tomato’s - rinse the rest of the tin with water and add to the pan. Stir well and leave to cook for 25-30 minutes

  4. After 30 minutes add the salt, pepper and paprika to the pan - stir and leave for 5 final minutes.

  5. Serve with rice, fresh chilli and basil.
