Beetroot, Carrot and Thyme Savoury Muffins


Caution: These are so good you may eat the whole batch in one sitting. Bake at your own risk (or willpower)

  • 1 large carrot, peeled and grated

  • 1 medium beetroot , grated

  • 1tbsp fresh thyme

  • ½ red onion, sliced

  • 1tbsp olive oil (x2)

  • 230g spelt flour (2 cups)

  • 1tsp baking powder

  • 1tsp bicarbonate of soda

  • 1tsp salt

  • 60g oats (1/2 cup)

  • 180ml coconut milk (1/2 cup plus 2tbsp)

  • 1tbsp apple cider vinegar

  • 80ml olive oil (1/3 cup)

  • 40g pumpkin seeds | plus extra to sprinkle on top


  1. Preheat the oven to 180°C fan

  2. Line your cupcake tin with cases

  3. Dice the red onion into small slices and place into a pan on a medium heat (6-8) with olive oil and saute for 5 mins. Place to one side to cool and use later.

  4. Grate the beetroot and carrot and place in a separate bowl.

  5. In a bowl mix together your spelt flour, baking powder, bicarbonate of soda and salt.

  6. Then add your oats, the grated beetroot, grated carrot and thyme - mix well.

  7. In a small measuring jug mix together the coconut milk, apple cider vinegar and olive oil. Add to the dry mix and stir together until just combined. It should be a thick ish dough consistency.

  8. Add the onion and pumpkin seeds in a folding motion.

  9. Spoon into your cases and bake for 45 minutes - check after 35 minutes with a cocktail stick (you are looking for a clean stick upon removal)

  10. Once cooked, remove and leave to cool for 10 minutes.

    Enjoy warm or cold for breakfast, accompanied with a salad or even as a side with soup. These muffins are the perfect savoury muffins with a slight sweet edge.


  • Beetroots are low in calories and a great source of nutrients, including fiber, folate and vitamin C. Beets also contain nitrates and pigments that may help lower blood pressure and improve athletic performance

  • Spelt flour is a grain. It is more water-soluble than wheat, which makes it easier for the body to digest. Due to the many minerals and vitamins spelt contains, it can help regulate metabolism, increase circulation, improve the immune system, lower blood sugar, and reduce bad cholesterol levels.
